Tanggung Jawab

  • Direct and oversee the daily operations of the Wu Xing Chinese kitchen, ensuring every dish meets Marriott's rigorous quality and presentation standards.
  • Collaborate with the Executive Chef to design and execute seasonal menus that highlight the principles of Wu Xing (Five Elements) and regional Chinese specialties.
  • Lead, train, and mentor a diverse team of cooks, fostering a culture of continuous learning, respect, and professional growth.
  • Manage kitchen inventory, including ordering, receiving, and storage of ingredients, while strictly monitoring food cost and minimizing waste.
  • Enforce all food safety, sanitation, and hygiene protocols to maintain a clean, safe, and organized kitchen environment.
  • Engage with guests to gather feedback on culinary offerings, ensuring a personalized and exceptional dining experience.
  • Stay ahead of culinary trends in Chinese cuisine and integrate innovative techniques to keep the menu fresh, competitive, and exciting.

Kualifikasi

  • Minimum of 4 years of experience as a Sous Chef or Senior Chef de Partie in a high-volume Chinese cuisine restaurant or hotel kitchen.
  • Formal culinary education from a recognized institution with a focus on Asian/Chinese culinary arts.
  • Deep expertise in authentic Chinese cooking methods, including wok techniques, dim sum preparation, and sauce making across various regions (Cantonese, Szechuan, etc.).
  • Proven leadership skills with experience managing, motivating, and evaluating culinary teams.
  • Strong business acumen with a solid understanding of food costing, menu engineering, and P&L management.
  • Excellent communication and interpersonal skills, with the ability to collaborate across departments.
  • Flexibility to work a varied schedule, including early mornings, late evenings, weekends, and holidays, as required in a 24/7 hotel environment.
  • Willingness to relocate or reside in Roxas City, Capiz.
