Tanggung Jawab
- Prepare a wide variety of sushi, including nigiri, maki, and sashimi, according to traditional and house recipes.
- Ensure the highest quality of fish and ingredients by performing daily inspections and proper storage management.
- Maintain a clean and organized workstation while adhering to strict HACCP and food safety regulations.
- Expertly handle knife work for precision slicing and portioning of seafood and vegetables.
- Collaborate with the Head Chef to develop seasonal menu items and innovative specials.
- Manage inventory levels and coordinate with suppliers to ensure a consistent flow of fresh products.
- Provide exceptional guest service by interacting with diners at the sushi bar and explaining menu components.
- Train and mentor junior kitchen staff to maintain consistency in food preparation and presentation.
Kualifikasi
- Proven experience as a Sushi Chef or in a similar high-end Japanese culinary role (minimum 3-5 years).
- Expert knowledge of sushi rice preparation, fish filleting, and traditional rolling techniques.
- Strong understanding of food hygiene, sanitation, and safety standards (HACCP certification preferred).
- Ability to thrive in a fast-paced, high-pressure environment while maintaining meticulous attention to detail.
- Excellent communication and interpersonal skills, with a professional demeanor for guest interactions.
- A creative mindset with a passion for staying updated on the latest culinary trends in Japanese cuisine.
- Flexibility to work in shifts, including weekends and public holidays, as required by the hospitality industry.
