- Prepare, bake, and finish a diverse range of breads, pastries, and desserts according to Accor's exacting standards
- Maintain strict hygiene protocols and HACCP compliance in all baking operations
- Operate and maintain specialized bakery equipment including ovens, mixers, and proofing cabinets
- Execute daily production schedules while ensuring consistent quality and presentation
- Collaborate with pastry chefs to develop seasonal menu items and innovative baked goods
- Manage inventory control and stock rotation of premium baking ingredients
- Participate in menu development and recipe testing for new culinary concepts
Kualifikasi
- Minimum 1 year professional baking or pastry experience in a high-volume environment
- Certification in culinary arts or pastry preferred
- Proficiency in fundamental baking techniques including lamination, fermentation, and tempering
- Strong understanding of ingredient properties and baking science
- Ability to work efficiently in fast-paced, temperature-controlled conditions
