Tanggung Jawab
- Oversee and manage daily bakery operations, ensuring efficient production schedules and high standards of product quality and consistency.
- Develop, test, and implement innovative recipes for a diverse range of breads, pastries, cakes, and desserts, keeping abreast of culinary trends.
- Lead, train, and mentor a team of bakers and pastry chefs, fostering skill development and maintaining a positive, productive work environment.
- Manage inventory levels, order ingredients, and implement cost control measures to maximize profitability without compromising quality.
- Ensure strict adherence to all food safety, hygiene, and sanitation standards (e.g., HACCP) across all bakery processes.
- Collaborate with the culinary and management teams to plan menus, special promotions, and cater to bespoke event requirements.
- Perform regular quality checks on raw materials and finished products, making adjustments as needed to meet company standards.
- Maintain all bakery equipment in excellent working condition and ensure proper cleaning and maintenance protocols are followed.
Kualifikasi
- Proven experience of 5+ years in professional baking, with at least 2-3 years in a leadership role such as Head Baker or Bakery Manager.
- Extensive knowledge and practical experience in various baking techniques, including artisan bread making, patisserie, viennoiserie, and cake decoration.
- Strong understanding of food safety regulations and hygiene practices, with relevant certifications (e.g., HACCP) highly preferred.
- Demonstrated ability to manage inventory, control food costs, and optimize operational efficiency.
- Exceptional leadership, communication, and interpersonal skills, with a track record of motivating and developing a team.
- Creative flair and a passion for innovation in recipe development and presentation.
- Ability to work independently and collaboratively in a fast-paced environment, often with early morning shifts, weekends, and holidays.
- A formal culinary degree or relevant professional baking certification is highly advantageous.
