Tanggung Jawab
- Develop and refine high-quality artisan bread and pastry recipes that align with market trends.
- Oversee daily kitchen production, ensuring consistency, quality control, and timely delivery.
- Lead, mentor, and train a team of baking staff to improve technical skills and operational efficiency.
- Manage inventory, order supplies, and maintain optimal stock levels while minimizing waste.
- Ensure all health, safety, and sanitation standards are strictly followed across the facility.
- Monitor production costs and implement strategies to improve profitability without compromising product quality.
- Collaborate with management to introduce seasonal products and signature menu items.
Kualifikasi
- Minimum 5 years of experience in commercial or high-end artisan baking.
- Proven track record in leadership roles with strong team management capabilities.
- In-depth knowledge of dough fermentation, sourdough techniques, and classical pastry methods.
- Strong understanding of food safety regulations and HACCP standards.
- Creative problem-solving skills with the ability to work under pressure.
- Excellent communication skills with proficiency in English and Indonesian.
- Formal culinary or baking certification is a significant advantage.
