PT Good Rupa Group is seeking a creative and disciplined Head Baker & Pastry Chef to lead our kitchen operations in the vibrant heart of Bali. In this role, you will be the heartbeat of our bakery department, responsible for crafting high-quality artisanal breads and decadent pastries that delight our guests.

Tanggung Jawab

  • Oversee daily production of artisanal breads, viennoiserie, and signature pastries.
  • Develop and refine seasonal menus to keep our offerings fresh and exciting.
  • Manage inventory levels, ingredient procurement, and cost control to minimize waste.
  • Supervise, train, and mentor junior kitchen staff to maintain professional standards.
  • Ensure rigorous adherence to food safety, hygiene, and sanitation regulations (HACCP).
  • Monitor equipment performance and schedule preventative maintenance.
  • Coordinate with management to deliver consistent product quality across all channels.

Kualifikasi

  • Minimum of 3-5 years of experience as a Head Baker or Lead Pastry Chef.
  • Proven track record of success in high-volume bakeries or luxury hotel environments.
  • Expertise in sourdough, laminations, and advanced pastry techniques.
  • Strong leadership skills with the ability to manage and motivate a diverse team.
  • Excellent understanding of food costing, inventory management, and kitchen operations.
  • Certification in food hygiene and safety is highly preferred.
  • Creative mindset with the ability to innovate and adapt to market trends in Bali.
