Tanggung Jawab

  • Execute precise cutting, trimming, and de-boning of premium meat cuts according to restaurant specifications.
  • Monitor and maintain inventory levels, ensuring optimal stock rotation and freshness.
  • Adhere strictly to food safety, hygiene, and sanitation standards (HACCP compliant).
  • Prepare specialized meat items, including house-made sausages, rubs, and marinated proteins.
  • Collaborate with the Executive Chef on menu development and cost-effective portion control.
  • Maintain all butchery equipment, including knives, grinders, and bandsaws, to a high standard of cleanliness and safety.
  • Manage waste reduction by maximizing yields from all primal cuts.
  • Maintain accurate logs for temperature control and storage compliance.

Kualifikasi

  • Proven experience as a professional butcher or meat cutter in a high-volume restaurant or luxury hotel environment.
  • Deep understanding of different meat breeds, grading, and optimal aging techniques.
  • Exceptional knife skills and demonstrated ability to work with speed and precision.
